Vallisassoli is the tiny new cantina / project from Paolo Clemente in Campania, where he tends a single hectare of vines: province of Avellino, in Clemente’s tiny village of San Martino Valle Caudina, about an hour northeast of Napoli. This wine, ‘Per Una Volta #3,’ represents bottlings that are experimental and for practice, as Clemente gains access to and gets to know other old vineyards owned by different people around his village, in this case a ‘garden vineyard’ of one hundred year-old vines inside the town’s medieval castle. It’s a blend of old interior Campanian varieties: Piedirosso, Olivella, Camaiola, and Aglianico, all trained as pergola. A wild ride—unfined, unfiltered, unsulfered, and speaking to the ancient heart of this place.
