Neversink gin starts with New York-sourced apples, carefully distilled with a blend of 11 botanicals to create a well-balanced, floral and gently-styled gin. The focus is on botanicals that marry well with apples, including three types of citrus, star anise, cardamom, elderflower, and, of course, juniper. A full-flavored, round gin, but avoiding the intense pine notes of a London dry like Beefeater. Subtle stuff, mesmerizing in a Negroni with lighter liqueurs.
