Vasilis Vaimakis is perhaps one of the most interesting experimental winemakers in Greece; he worked for major wineries in the '90s making more commercial wine; has a PhD focused on how to prevent oxidization in white wine... When he began to experiment with no-sulfur winemaking in the early aughts, some of his first vintages were an immediate successes. In his alpine climate of Macedonia, with very cold winters, these wines almost have more in common with Switzerland and Trentino-Alto Adige than they do with island wine. 'Mater Natura 4' is Xinomavro aged in barrel for one year; the rest is bottle age. One of the greatest red wines in Greece, hands down, and these are the last bottles from Vaimakis' cellar.
