Soba represents one of a series of collaborations that Unified Ferments has undertaken with Kettl, a Brooklyn-based importer that sources exceptional Japanese teas. This iteration uses not only jasmine tea but also buckwheat as a base, drawing deep notes of heirloom grain and spun sugar all with less than 0.5% ABV. The ferment pulls out the fruitier side of the grain, with high notes of poached pear and persimmon. This is technically a kombucha, but a very finely made one - no overwhelming sour or funky flavors here.
