The Kojima Sohonten is one of the oldest and most famous sake breweries in Japan, achieving fame as brewers for the Uesugi samurai clan, but their sake has only recently become available in the United States This sake is the ultimate indulgence; made by the highest quality Yamada Nishiki rice milled down to a painstaking 35%, what is bottled is only the drops of liquid that are released via gravity at the end of fermentation, with zero force or pressure applied (a process known as shizuku.) Toko's Ultraluxe boasts a dizzyingly complex bouquet of flavors, with lychee, strawberry, grapefruit and white flower predominant.
