Crémant is the category of French sparkling wine made in exactly the same way as Champagne, merely belonging to a different region of production. Often these wines will have a very high quality and structure similar to Champagne, just made with different varieties and in different terroir. One of the best examples of Crémant we know from the tiny Jura region is this one, Domaine Tissot’s cuvée called ‘BBF.’ The base wine is fermented entirely in wooden barrels called ‘fût,’ lending the wine an airy, expansive, complex feeling; the wine is aged in bottle on full lees at least two years, with no dosage. A seashell-touched, full-bodied, firm and refreshing sparkling wine, one that speaks to the structure of the Jura but also the elegance and full bubble of the Champagne method. Complex and delicious.
