Stagiaire Wine is the brainchild of New Orleans native Brent Mayeaux, taking its name from Brent’s time spent as an apprentice - or stagiaire - at wineries around the world. 'Dreams on Layaway' is an interesting entry into Brent's collection in that the first vintage was entirely unplanned - when the 2020 California wildfires hit Santa Cruz Brent, along with many Central Valley winemakers, was forced to direct press much of his Pinot Noir into rosé. The 2023 vintage comes from a slightly cooler site and arrived among much trial and tribulation, but the final product is a testament to excellent winemaking technique - almost like a Blanc de Noirs without quite so many bubbles, delicate but insistent. Beautiful stuff.
