We are firm believers that Txakolina should not be the beach-oriented, party in San Sebastián type wine that it was sort of made into about ten or fifteen years ago—exceedingly light-bodied, so pale it’s almost watery, with added CO2 so it feels “kind of” sparkling. Instead, the Basque varieties that are native to this region, in this case mostly Hondarrabi Zuri, are actually to render white wines of complexity and substance, maintaining a sort of salty, savory quality, but speaking of also the mountainous terrain that’s not far off from the sea. Astobiza is based in Álava, at 660 ft of elevation, so there should be a bit of power and punch to this wine, and there is. Notes of pears, white peaches, green apple and grapefruit, with a pleasingly present body.
