Recaredo is a multi-generation sparkling wine house in the Penedès, operating in the designation that would’ve been known as Cava, but in recent years about a dozen or so conscientious, serious wineries developed the appellation called ‘Corpinnat,’ derived from Latin for ‘the heart of the Penedès.’ This cuvée, ‘Terrers,’ from this serious, organic and biodynamic-farming estate is its entry-level - with over five years of lees aging in the bottle, hand-riddling, and hand-disgorgement. It’s a sparkling wine that puts a lot of industrial Champagne houses to shame, with immensely more labor, sense of terroir, and care put into it than any random bottle of Veuve or Moët that you could spend equivalent money on. Built off the magical white grape varieties of this region: Xarel.lo, Macabeu, and Parellada, you’ll be rewarded with ocean notes, citrus, snappy orchard fruit, and the Penedès’ singular sensation of salt.
