'Baudili' is natural wine producer Rámon Jané's entry-level still white wine, a blend of the two Catalan native white varieties, Xarel.lo and Parellada, that were only used to make sparkling Cava in previous decades. It is a super bright and vibrant wine, delivering all the zippy dimension you'd want from a New Zealand Sauvignon Blanc but with none of the boredom. Creamy but somehow also taut on the palate, this is the Platonic ideal of dry white wine. I don't know why we drink anything else, to be honest. Join the Penedès still white wine revolution!
