A Champagne from the fabulous, careful grower Fabrice Pouillon: smoky, floral orchard fruits and redcurrant on the very perfumed nose. On the palate, sappy red fruit and bitter pear skin flavors are joined by a little bit of buttered toast. The finish is very structurd, firm-feeling, and long, with lingering minerality and a touch of bitter quinine. One of the more burly, tense Champagnes we know; it's the signature of Pouillon's wines. Throw it in a Burgundy bowl and have throughout your meal; this isn't a Champagne you should start the night with!
