Tom Lubbe of Matassa is an icon of natural winemaking in the Roussillon, with roots stretching back to Domaine Gauby, an even earlier and more iconic producer in the region. Tom has influenced a new, perhaps call it third generation of young, natural producers, with many of them seeking out his influence for training and apprenticeship. The Vin de France blanc is the top white wine that Lubbe produces; it is a blend of nearly 100 year-old Grenache Gris and Macabeu. The Grenache Gris is whole-cluster direct pressed, while the Macabeu is macerated for two weeks; then both are blended together and fermented in a (very big!) 2000L oak foudre for ferment and aging. Serious, structured, but full of aromatics and light, this is a prime example of why Matassa has become as famous as it has in the last 20 years. Age this white if you can!
