Fresh as a daisy, medium-weight, and a nice layered feeling on the palate: this hard-to-find Lazio white native variety, Passerina, has us longing for the golden plains around Rome whence it hails. White fruit and a grassy finish, but with enough body to match up with things like cacio e pepe or the American versions of baked mac 'n' cheese. A special, natural version of this interesting grape.
