Konteki means “dew drops of the earth,” while Higashiyama (the brewery name) translates to “eastern hill“ - the sake is named by brewers who start their days watching the sun rise over the mountains until the dew drops glisten as if they were the tears of dawn. A rare example of a honjozo polished to Daiginjo level, Tears of Dawn has a touch of brewer’s alcohol added to open up aromatics and lighten things up. A beautifully bright and crisp sake that manages to avoid any impression of being sweet or fruity.
