A dry and savory sake from Kagawa Prefecture, the only region in Japan with a climate suitable for growing olives. This sake is actually made using yeasts harvested from the fruit of the native Sanuki olive tree, a departure from the government issued yeast and Komi that most large breweries use. Floral, saline and slightly bitter - this one pairs beautifully with heartier Japanese home cooking (katsudon especially!)
