Isabelle and Denis Pommier are a family estate in Chablis, where they’ve owned vineyards since 1990; beginning with just two hectares of vines, they’ve since grown to 16, which in Burgundy is still quite small by many standards. Since the production of their first wine in 1994, they’ve begun practicing organic farming, and almost all of their estate vineyards are in full conversion now - it’s somewhat rare to see a Chablis house actually get with the times and care about this. This village-level wine is ripe on the nose, with mineral and slightly smoky notes. Soft and complex on the palate, with equal play between richer creamy notes, elegant acid, and minerality. A clear, balanced example of this misunderstood appellation where the wines are often either mega expensive or anonymous and industrial. And a worthy winter white to boot.
