This new Pinot Gris from well-established artisan winemaker Holger Koch really represents something innovative from this elegant winery: a ’N-series,’ a special lineup of lightly macerated, fully zero-sulfur wines. Far from the weirdo stuff that these techniques can sometimes emit, Holger’s special bottlings are remarkable: dreamy, pink-orange fruit on the palate, the winery’s signature silken texture, and a clear notes of herbaceousness. Two week-maceration during ferment in steel, then aged 10 months in predominantly 500L barrels. Volcanic soils are evident in the wine’s round body and deeply mineral palate. Pair with roasted rabbit or chicken tenders and fries—this unusual white wine can kind of do it all.
