Hiyu's 'Atavus' is a solera wine, i.e., a wine that has been kept for several years, each vintage, with a little of the new vintage added to it each year. It's a practice that has a background in both Champagne and Jerez, where wines get blended across many vintages: 'Atavus VI' is the sixth release of this solera, begun in 2013. In this wine, the fruit is a single vineyard co-planted in the 1960s called 'Atavus,' or 'ancestor;' it's Gewürztraminer and Pinot Noir in an intensely elevated alpine climate under the gaze of Mount Hood. This wine is orange, but with very little tannin, it is icy, powerful, and rosy—like peach skin—all at once. Magisterial.
