Emmanuel Giboulot has been certified organic since the 70s and certified biodynamic since 1997 — a rare thing in the region of Burgundy. This Bourgogne blanc, having been fermented in an open-top fermenter and aged on fine lees for 11 months, is round but not too weighty, lightly floral and golden. It's a fine, soft example of what a young white wine from Burgundy can be.
