Touraine is one of the best appellations in France for the much misunderstood variety Sauvignon Blanc. The inoculated, heavily filtered and sulfured versions of this variety bear no resemblance to what happens when it's farmed organically and fermented gently and naturally, especially in terroir like Touraine: fuller-weight, herbal, and distinctly seashell-like or mineral on the palate. Dry, uncomplicated, but real wine.
