Its name, Trempette, means “dip” in French, a reference to the wine’s defining technique. Chardonnay is pressed directly, while whole clusters of Chenin Blanc and Sauvignon Blanc are steeped in the juice before pressing, giving the wine subtle texture and aromatic lift. Domaine des Sablonnettes bottled its first vintage four generations ago, and some of the vines are more than 120 years old. Today, the family farms biodynamically across the Côteaux du Layon. Fresh, bright, and lightly textured, Trempette belongs at the table over a long lunch.
