Cyril Zangs was almost 50 years old before he started making cider but established himself as a top natural producer of apple wines in Normandy a long time ago. He farms orchards aged between 15-60 years of age, including almost 70 different cider apple varieties, and this exceptionally rare eau-de-vie is distilled from one of those excellent unfiltered, unsulfured ciders. It is a deeply pure expression of green, green apple - smelling intensely fresh like spring, bright leaves, and pure tart fruit. We don't know of a more natural expression of Normandy's famous fresh coast than Zangs' distillate.
