Not all Lambrusco is created equal. In fact, most of the Lambruschi you've probably had have been modern, semi-sweet, sticky trattoria versions of these wines, which have dominated the Emilia-Romagna landscape since the '70s and '80s. Crocizia does the old-fashioned style, and way up high in the rocky hills of the Apennines; this cuvée 'Marc'Aurelio' is made from 100% Lambrusco Maestri, a particular and rare grape under the Lambrusco umbrella. Black-fruited, feral, and extremely rocky, it's meant to be fierce enough to clean up your palate after rich guanciale, pancetta, cacio e pepe. So yes: it's dry. But she's also a wild one.
