Marco Rizzardi's ancestrale-style sparkling of Sauvignon Blanc - three days of skin contact, a light haze in the glass, foamy, salty, meadow flowers and green herbs. Late spring / early summer ideal wine for park hangs and forest walks. Don't think of it like Prosecco, however — these are natural bubbles that come from fermentation inside the bottle; it's not going to be 'sparkling' like industrial wines with CO2 added. Sun and stars in a bottle!
