Chiyonosono was the sake brewery single-handedly responsible for reviving the practive of making junmai sake in the aftermath of the Second World War - until this sake came along in the 1960’s, all sake had distilled alcohol added to it due to rice shortages and war rationing. After the war, Chiyonosono crafted the first junmai sake as a commitment to the rice farmers who had suffered during the war, and celebrated by sharing it from a large, red lacquered sake cup called a Shuhai. 'Shared Promise,' their flagship junmai, is soft and expansive, with subtle umami balanced out by fresh melon notes and aromas of orange blossom.
