Carolina Gatti, from Ponte di Piave in the Veneto region, is one of the most fun, feeling, swashbuckling vignaioli out there. The title of her col fondo Prosecco, "Bolle Corsare," or "Pirate Bubbles," is well-deserved. It's been a perennial favorite of ours for ages, one of our favorite natural Prosecco in the whole region; Carolina's is salty, hazy, foamy, always has charming notes of green olive, lemon curd, crushed-up rocks. It's super easy to drink and isn't overly complicated, just very well-made and perfect for summertime food: fennel salad, aged cheeses, anchovies, white pizzas.
