Young couple Paula Sandoval and Agustì Costa are a new addition to the Penedès’ ever-growing roster of terrific new natural wineries reclaiming traditions and starting new experiments out of the famous viticultural valley that up until recently was only known for Cava. This no-sulfur-added 100% Merlot, called ‘Animal Instinct,’ comes from a single plot of low-yielding vines, resulting in a lot of concentration, but with the Cal Xurriu hallmark freshness left intact. Notes of licorice, mint, forest pines, and dried red flowers, this wine bears no resemblance to industrial versions of Merlot; instead it’s a love letter to Mediterrean wildness and expressiveness.
