Move over, Chardonnay—meet Hárslevelú (harsh-LEV-el-oo), one of Central Europe's most layered and age-worthy white wine varieties. It's been used for centuries as a component in Hungary's famous Tokaj wines. Bott Frigyes' Slovak, biodynamically farmed iteration of this tropical-but-elegant variety is a stunner, for those lovers of full-bodied white wines with lots of gas in the tank for aging. Delicious now, though, and will pair beautifully with things like pork and pineapple, crispy fried rice, flank steak with spicy herbs.
