East of Genoa, on the Ligurian coast, is one of the region’s more accomplished wineries, Bisson. A négociant producer of high standards, Bisson is a label deeply concerned with preserving and making better-known the increasingly rare native grape varieties of this region (which are largely being lost as people abandon viticulture and agriculture in the region in exchange for working in tourism or business). Pigato is a close relative of the grape variety Vermentino, but it’s rather rare to find it as a standalone grape given how commonly planted the latter variety is. A touch lighter in body, this wine showcases classic Mediterranean herbs, white flowers, white fruits, and iodine on the nose as it opens up. Look up trenette with pesto or traditional pansotti with borage - if you’re interested in Genovese or just seaside cuisine in general, this wine is an excellent companion.
