Situated in Caunes-Minervois, nested between the ancient city of Carcassonne and the Montaigne Noir, Benjamin Taillandier is an up-and-coming vigneron committed to organic production. Taillandier feels that many of the wines in the Minervois AOC are too concentrated and alcoholic, and works hard to make wines that, while full flavored, are lighter, fresher, and lower in alcohol than most average wines from the Languedoc. His ‘Audere’ Carignan, named for the Latin word for desire or daring, is lively, fresh, and light on its feet with good acidity and black fruit.
