We’ve often said when tasting and drinking the wines of Domaine de Bellivière that they are textbook wines for learning the appellation of Jasnières, widely considered one of the Loire’s greatest white wine designations. They’re just very transparent wines, speaking with elegance of the clay, flint, and tuffeaux rock that form their slick, persistent core. Chenin Blanc’s softer golden hues don’t disappoint here, with pretty autumnal stuff, and the dash of sweetness—ever so light—that is on this bottle would make it a knockout with the salty crab and fish sauce notes in Thai food or the fermentations of Korean cuisines. Also lovely on its own as a wine of meditation.
