Fresh, beautiful, and a new producer to the often-staid region of northern New York's Finger Lakes, Barbichette is a young natural wine project from négociant winemakers Louisiane Remy and César Vega. The duo is focused on sourcing well-farmed fruit from high-quality vineyard sites up north, then fashioning that fruit into pure, clear wines with no additives of any kind. 'Cache Cache' is a delight of a Cabernet - proof that you don't have to render this grape into just a rich imitation of Bordeaux or Napa, but rather can catch coolness, herbs, spice and subtlety in its maritime, forested DNA. Black and red fruits, bright and rustic, it's a better fit to poultry and squash autumnal dishes than prime rib, duck, or lamb.
