Giuseppe Cipolla is a new producer, having begun his work in 2015 for a brand-new, personal winery by his own name, but in a very little-known pocket of Sicily, about a half hour from Agrigento on the southern edge of the island. His area is especially marked by super salty, chalky, sulfuric soils, so much so that there used to be mines in the area for the very special salt-rocks. Now, those mines are defunct, and Cipolla is exploring what those soils mean for several of the indigenous varieties he’s cultivating, on just about 2 hectares, in this unique place. This is his deep rosato or light red, called in Italian ‘salt eye,’ based on Nero d’avila and with about 20% Catarrato, Inzolia, and Muscat d’Alexandria, all white varieties, blended in for complexity. It’s one of our most favorite new discoveries in Italy in the last year or two!
