Instead, this wine is sourced from a collection of white-variety vineyards planted on granite in the foothills of the Serra da Estrela, with most vines aged between 25 and 70 years. These parcels boast a wide array of indigenous grape varieties, with a predominant grapes being Encruzado and Bical, complemented by over a dozen others such as Malvasia Fina and Cerceal. The granitic soils and varying altitudes contribute to the wine’s distinctive minerality and freshness; fermentation and élevage in a split of neutral oak and stainless steel ensures balance.
