Samuel Párraga is making some of southern Spain’s most vibrant and unbridled natural wines at the moment. His are not delicate, ethereal little wines, but rather, wines with punchy, joyful, saturated sorts of tones, unapologetic in their sun-drenched nature. This rosé is built off a backbone of Pedro Ximénez, a grape everyone knows for the sweet sherries of Jerez, with the jazzy flowers of Moscatel and sappy fruit of Tempranillo giving the whole thing lot of red Capri-Sun energy. Add a deeply acidic, salty underpinning with an almost rose-vermouth type flavor and texture, PLUS a lightly bubbly quality, and you get one of the most interesting wines currently in shop.
