Rose Hill Farms in the Upper Hudson Valley has been in operation for nearly 200 years but only recently was taken over by some young new owners that converted the whole orchard to organic and sustainable practices. The fruit for this dessert wine is drawn from their inaugural 2018 harvest to make a slightly fermented apple cider combined with apple-pear spirit. “Pommeau” is based on a traditional style of dessert cider originating in northern France - partially fermented cider is fortified with brandy of apples and pears to arrest fermentation and preserve natural sweetness.
