Richard Stávek is one of the pioneers of natural wine in Moravia, starting to produce his anti-commercial, idiosyncratic wines in the mid '90s. His white wines, like this one, are oxidative, always copper and deep rose in color, with powerful aromatics and structure — they are best drunk more like red wines, at cellar temperature and with sufficient time to open and reveal layered flavors and aromas. Medovy Muškatek is the variety Muscat, with a touch of local farm honey added — structured, a touch floral, with red, yellow, and honeyed dried fruits on the palate. Bone dry, with some tannin. Amazing with pork or lamb.
