Silvana Pijoan, is the second-generation winemaker of Vinos Pijoan. Practicing organic and cultivating a micro-ecosystem where native Baja California plants (think wild sage and cacti) coexist harmoniously with the vines. This aromatic blend, characterized by bright acidity, is handpicked and crafted from two plots of land: Zinfandel and Grenache, featuring 40-year-old vines in red clay and sand soil; and Zinfandel and Colombard, which have been dry-farmed in sandy granite soil since their planting in the 1970s. Aged in stainless steel tanks, without sulfites or added yeast, is unfiltered and is a perfect introduction to the new generation of winemaking in Mexico. Great as an aperitif!
