Emmanuel Lassaigne is an icon in natural Champagne production; he took over from his father Jacques in 1999 and focused on more oxidative winemaking immediately, plus eliminating chemical additions with the exception of a small amount of SO2 at pressing. This Blanc de Blancs, sourced from nine separate vineyard parcels in his home terroir of Montgueux, showcases a serious spine of acidity, a hallmark of Lassaigne's wines, but also a ripe, forward, giving character.
