Timotheus is a lovely combination of some of Gut Oggau's more mature vineyards, 40 year-old vines of Grüner and Weissburgunder, grown on a mix of limestone, slate, gravel, and sand. Grapes are hand-harvested and partially destemmed; around 1/3 is fermented on skins and the rest is direct press; fermentation takes place in used 500L barrels. It's given about a year's worth of aging in those barrels, then bottled unfined, unfiltered, with zero additional SO2. Ethereally light and lively, and with pretty gauzy texture too: the sensation of minerality, and the proximity of the lake Neusiedl, is persistent, soft but clear in this favorite bottling from our friends Steffi and Eduard.
