'Cave Dew' is young Santa Cruz winemaker James Jelks' homage to the early years of his wine education, in the early 2000's, when Burgundy had become dominant in the global wine education, and therefore Pinot Noir was the variety that he spent a lot of time thinking about. This is Florèz's more affordable or accessible bottling of Pinot, drawn from the organically farmed Gimelli Vineyard. 80% whole-cluster carbonic fermentation, 20% destemmed, rested in neutral French barrels for about 6 months on lees. Cherry, blueberry, and earth.
