Christine Pieroth's wines are evocative: delicate, lovely, gauzy in texture and to the eye. Her Weissburgunder, or Pinot Blanc, is our favorite: taken from one single vineyard of 35 and 60 year-old vines on pure slate soils, the fruit was foot-stomped, mostly whole-bunch fermentation for about two weeks, gently pressed, with fermentation finishing in used oak barrels. The wine then rested on full lees until the following summer and then was bottled unfiltered, unfined, without any SO2 added. Light, gently persistent, with a very fine tannic structure and a sense of meadows and spring.
