“Farmhouse of the Chimeras” - that’s what this winery’s name translates to. On the foot of Lake Saragou in the Hérault region of the Languedoc, Mas de Chimére's white is a traditional blend of various local and international French varieties: Grenache Blanc, Carignan Blanc, Viognier, Chardonnay, Roussanne, and Terret. Moreover, these vines are planted on a wide array of soil types, something that makes this region mega-interesting: Permian red clays, volcanic basalts, and more, all of which bring structure, minerality and a natural tension. Notes of: wildflowers, ripe citrus, white peach, apricot, and hints of honey and sweet spices, all underpinned by a saline freshness reminiscent of the soil. Way overperforms for its price; a great reminder that all of us should be drinking more southern French wine, away from the pedigreed appellations. This is where both the sunshine and the value lie!
