Nobody cares about Weißburgunder, alias Pinot Blanc or Bianco, and this is wrong. Yes, it can make horribly drab wines in the hands of the wrong producer, but so can Chardonnay, one of its old cousins. In the right hands, this grape variety yields up spice, minerals, and dazzling fruit notes - orange, pink, and gold. The trick is getting all of this and still having finesse, which the Pfalz winery Koehler-Ruprecht is famous for being able to do. ‘Kabinett’ wines in Germany are those which have been harvested just a touch late, usually resulting in a bit more saturation and hue, but ‘Trocken’ refers to the fact that the wine is fully dry. A very ripe wine, with citrus, stone, chalk notes, but also red apple, spring herbs, and even perhaps green vegetables, but dry on the finish. Such an unusual wine, that would pair interestingly with everything from shrimp gumbo to barbecued chicken to leeks and potatoes in spring.
