A highly unusual and sauvage co-fermentation of all the beautiful plants and fruits that grow in Hiyu's paradise-like, polycultural farm in the Columbia Gorge. Made in a solera style, this is the second iteration of this bottling, which includes Pinot Gris grapes, heirloom pears, plums, blackberries, elderberries, and rosehips. Hazy dark orange color, tart acidity, light fizz, and low alcohol are all compelling reasons to explore this boundary-pushing fermented number.
