This sustainably-farmed Cava is produced from native Penedès grape varieties Macabeo, Xarel.lo, and Parellada. It's dry, fresh, and coastal. A lot of people know Cava from the brand Freixenet, but this is a substantially more delicious wine—no sugar added here ('Brut Nature), and made with grapes from a more specific part of Catalonia, the Alt Penedès, as opposed to those big houses that buy fruit from all over the region to make bulk wine. A nice alternative to Champagne.
