Davide Spillare's Venetian wines, pulled from vecchie vigne (80 year old vines, in some cases) ferment via native yeast in used oak barrels and go into bottle without any intervention, meaning no filtration, fining and no addition of sulfur. Despite this hands-off approach, Davide manages to bring the essence of Garganega into bottle without giving up on elegance and freshness: green herbs, spring flowers, and a smoky, mineral undertone to this hazy white wine that speaks of the volcanic and limestone soils that are the hallmark of the Veneto. So, so far away from the industrial Soave of some 20 and 30 years ago! Pairs with grilled squid, fried fish sandwiches, and salt and vinegar chips.
