This is a single-vineyard bottling of Dolcetto from Cascina Corte’s oldest holding, a parcel called ‘La Pirochetta,’ planted in 1946. The winery doesn’t produce this bottling every year, but only in the best vintages; it ages a year and half in cellar between steel and concrete, then another year in bottle before release. All of that is to say that this wine has a lot of life ahead of it: it’s structured Dolcetto whose shape and tannins will make you think more of Nebbiolo—with deep black fruit like mulberry or elderberry, and a clear streak of soil. Open for a few hours before drinking; pair with game meats, chili, or a Thai-style stir-fried pumpkin.
