Suze, a french aperitif staple since 1889, is these days one of the most called for bitter liqueurs in the creation of a White Negroni. The irony there is that it’s decidedly, proudly, technicolor yellow, imbuing the drink with an almost lemon-lime Gatorade hue. But it’s a classic for a reason, and bitter-hounds love its pure gentian, herbal quality. This complex, aromatic aperitif has notes of bittersweet herbs and subtle accents of vanilla, candied orange and spice and a delicately bitter finish.
