Coming to Slovenia from first the Burgundian-Alsatian region and then marching along through northern Italy, Pinot Gris is here rendered closer to a red wine than to a white—in line with its Friulian neighbors just to the west of the Gorizia hills, where Štekar makes their soulful, organically farmed wines. Four weeks of maceration on the skins followed by 11 months in neutral barriques, this traditional 'ramato' style should be enjoyed with main courses and at cellar temperature — it's not a modern-styled white to drink as an aperitif!
